Pad Thai is the dish most people know — and the one most places get wrong by making it pale and sweet. Ours is the real thing.
What is pad thai?
Pad thai is stir-fried rice noodles with a sauce built on tamarind (sour), palm sugar (sweet), fish sauce (salty) and dried chilli, tossed with egg, bean sprouts and crushed peanut, then finished with lime. The balance is the whole point: sour leads, sweet follows, salt and heat round it out.
How we make it at Two Sisters
We wok the noodles so they pick up a little char, then build the tamarind-forward sauce and finish with peanuts and bean sprouts. It carries a contains-nuts tag — ask for it without peanuts if you need to. This is the "Canberra comfort classic" for a reason: familiar, but unmistakably made right.

Q. Is pad thai gluten-free? +
Rice noodles are gluten-free, but the sauce and any cross-contact in the wok mean it is not guaranteed gluten-free. Tell us at order time and we will flag it.
Q. Does pad thai contain nuts? +
Yes — it is finished with crushed peanuts, so it carries a contains-nuts tag. Ask for it without peanuts if you need to.
Q. Is your pad thai sweet? +
No. We use tamarind for the authentic sour-sweet balance rather than the pale, sugary version you find elsewhere. It should taste bright, not dessert-sweet.
