Pad see ew is pad thai's smoky, savoury sibling — the dish for when you want noodles with depth rather than sweetness.

What is pad see ew?

Wide, flat rice noodles braised in dark soy with Chinese broccoli (gai lan), egg and your choice of protein, then wok-tossed hard enough to pick up wok hei — that charred, smoky edge you can only get from a hot pan. It is savoury and just gently sweet from the soy.

How we make it at Two Sisters

We sear the noodles so they catch on the wok, keep the broccoli with bite, and finish with egg. It is not a spicy dish by default — add chilli on the side if you want heat.
