What is a curry puff?
A curry puff is a small handheld pastry with a savoury filling (here, spiced potato), crimped and fried or baked. Ours are made in-house, which is why the pastry stays flaky rather than doughy. They are closer to a street snack than a saucy curry — pick them up and eat them warm.
How we make them at Two Sisters
We fold the pastry by hand around a gently spiced potato filling, then fry so the outside shatters and the inside stays soft. They sit nicely between spring rolls and satay on a shared starter plate.
